Our wines
- Grapes grown and managed organically.
- Wines with natural acidity that are refreshing and stand the test of time.
- Minimal intervention as we accompany the wine’s journey through the cellar.
- Wines we would like to drink with our family and friends.

AIRÉN
The native and queen variety of our “Mancha Manchega”. A variety that has been underrated and relegated for years to the role of bulk wine symbol.
However, by treating it well in the vineyard and innovating its winemaking process in the cellar, we achieve wines with structure and personality.
In our case, it is made from grapes of a family-owned bush-trained vineyard about 40 years old, in which part of the must is obtained by direct pressing, to which we add another portion of destemmed grapes. Everything is fermented (with the skins), and during 3–4 months, lees stirring is carried out, resulting in a wine that is smooth, yet with acidity and easy to drink, but still serious and balanced.

SAUVIGNON BLANC
Our first production back in 2020 featured only this variety, which has brought us so much joy. A Sauvignon Blanc that makes subtle “nods” to those from the New World (New Zealand, Australia, etc.).
Made from the free-run must of our Sauvignon Blanc vineyard, with minimal intervention and extensive lees work during its aging process. This wine stands out for its freshness, natural acidity, volume, and persistence on the palate.
A versatile and elegant wine that pairs equally well with a friendly chat over your city’s typical tapas as with a fine dining experience at your favorite restaurant.

SYRAH
Our cheerful and delicate rosé, made from Syrah grapes. A gentle pressing allows us to obtain just the right color and all the typical character of this variety.
Extensive lees work accompanies the aging of this rosé, which stands out for its complexity, minerality, and freshness.
With it, you’ll be able to break the “clichés” often associated with rosé wines.

RISCO
Made from our flagship variety, Sauvignon Blanc. Free-run must harvested from the stoniest part of the vineyard.
Aged for 3–4 months in French oak and acacia barrels, allowing the wood to integrate perfectly with the wine without diminishing the varietal character, resulting in an elegant wine that retains the natural acidity characteristic of the grape.
Its complexity makes it the perfect companion for the finest fish and meats.

CALIZO
How do you combine elegance and warmth? The answer lies in our bottles of Serapio Calizo.
Made from Syrah grapes, hand-harvested at their perfect ripening point and carefully treated in the winery, where a very low-temperature fermentation brings out all the fruit’s potential, resulting in a smooth, complex, luscious, serious, and elegant wine that will not leave you indifferent.
It’s the red wine even those who only like white will enjoy.
