Our vineyard

The plots where we obtain our grapes are located in the south-western corner of the province of Cuenca. Specifically, in the municipality of Mota del Cuervo.

In the area of Geminillo, as it is called in the village and within the Complejo Lagunar de Manjavacas, sOur plots are located in Sauvignon Blanc and from Syrah. In total, there are 2 hectares divided into 2 plots: 1.5 hectares of Sauvignon Blanc and 0.5 hectares of Syrah.

Our Sauvignon Blanc It is a plot laid out in an east-west direction at an altitude of around 670 metres, on stony, sandy, shallow soil which, although not very fertile, contains all the nutrients necessary for the plant to develop within a depth of 40-50 cm, which is the depth of the soil above a slab that covers almost the entire plot. all the nutrients necessary for the plant to develop. Our plots are dry-farmed, so, combined with the fact that Sauvignon Blanc is not native to these latitudes, we have to carry out shading and cluster thinning to achieve optimal ripening of our grapes, which usually occurs in the first half of August.

It is a plot that, although currently trained on trellises, was originally planted in a bush formation. However, it had to be trained on trellises due to the rabbit plague that affected the area.

From this plot, we harvest the grapes to make our Serapio Sauvignon Blanc and Serapio Risco.

Our Syrah, It is a small plot planted in 2006, just like ours. Sauvignon Blanc, which, although located next to the previous one, radically changes the soil where it is grown. It is formed on a plot with a lot of depth and a limestone and sandy composition. It borders the old Navalengua lagoon, which is currently dry due to the drop in the water table. This plot also belonged to Sauvignon Blanc However, in 2021, we decided to replant it, as we believed that the land on which it stands was ideal for the Syrah variety (and so it has proved to be).

The plot is laid out in a north-south orientation. We thin out the bunches to regulate the load and achieve the desired ripeness, which is reached during the second half of August.

From this same plot, we harvest grapes for our Serapio Calizo and Serapio Sirá

Finally, we grow our Airén variety on a small plot (600 vines) in the municipality of Santa María de los Llanos at an altitude of around 760 metres, planted in 1986. It is trained using the goblet system, on shallow, sandy loam soil.
